Rendang Istimewa Adabi

Ingredients :
1 packet of 30 gm Adabi Rendang spices
1 whole chicken (cut into 12 pieces)
12 cups of coconut milk (1 whole coconut)
3 inches of dried ginger (pounded finely)
½ shredded coconut (pounded finely)
10 table spoons of kerisik
3 turmeric leaves (sliced)
2 lime leaves (sliced)
3 stalks of lemon grass (pounded)
4 stalks of lemon grass (finely sliced)
1 inch ginger (pounded)
1 inch young turmeric (pounded)
15 red onions (pounded)
15 table spoons of cooking oil
2 pieces of candlenut (buah keras)
100 gm cashew nuts (fried)
5 table spoons of tamarind water
Sugar and salt to taste

Cooking Method :
1. Heat the oil
2. Fry the dried ginger, lemon grass and ginger
3. Add spices and chicken. Cook till it’s ¼ cooked
4. Add coconut oil, kerisik, young turmeric, onion, buah keras, tamarind water, sugar and salt to taste and let it cook till ¾
5. Add shredded coconuts, turmeric leaves, shredded lemon grass and cashew nuts
6. Cook till it becomes dry
7. Ready to be served
